Good to see that we are not alone with our problems!
We experience exactly the same with 8.01 (and 8.0 too). Worked fine with 7.x but we coukdn't verify for sure that this was the reason as we changed some things in our network environment in the same time.
While IMAP is very slow in general with huge databases (users with 1.6GB mailfiles and 20K documents) it was unusable for Mac users at all. Unfortunately one of these was the one with the huge mail file.
Apple Mail as well as Thunderbird couldn't be used on Mac. The client tried to get the mails and you could see 5 imap threads per user on the server task list but almost nothing happend. Sometimes some mail could be fetched but most times the client was just trying and trying over and over again.
I had used the disable/enable imap a few days ago with no effect. Yesterday this guy cleaned up his mailfile (now only 650MB) but no better results.
Today I upgraded the folder design on the server and performance was way better. Still slow but usable.
But still some problems as some messages seem to be empty (although they are not) or the content appears only after several tries or a long period of time.
